    Heat the niter kibbeh in a pot over medium heat. Add the onions and cook until soft and lightly golden.

    Stir in the garlic and cook until fragrant, then add the tomato paste and cook until slightly darkened.

    Add the berbere and stir briefly to bloom the spice.

    Whisk the shiro powder with the water in a bowl until smooth.

    Pour the mixture into the pot while stirring constantly to keep it lump-free.

    Bring to a gentle simmer at 90°C (194°F) and cook, stirring often, until the stew is thick and creamy.
