Fish

    Catfish (cut into serving pieces)

    Odika Paste
  • 200g
    Tomato (finely chopped)
  • 160g
    Onion (finely chopped)
  • 15g
    Garlic (crushed)
  • 40ml
    Palm Oil
  • 650ml
    Water

    Season the catfish with the salt and black pepper, then set it aside while you make the sauce.

    Heat the palm oil in a pot over medium heat.

    Add the onion and cook until soft.

    Stir in the tomato and garlic, and cook until the tomatoes collapse into a thick base.

    Whisk the odika paste into the water until smooth, then pour it into the pot.

    Bring the sauce to a gentle simmer, stirring until it thickens slightly.

    Lower the catfish into the sauce, cover, and simmer until the fish is cooked through and the sauce is glossy and reaches 63°C (145°F).

    Serve the fish hot with plenty of the odika sauce spooned over it.
