Method

Cook the plantain in simmering water for 15 to 20 minutes, until tender. Drain, mash while warm, and mix in the salt.

Divide the mash into equal portions. Flatten each one, add the queso fresco cheese, and close the plantain around the filling.

Heat the vegetable oil in a skillet over medium heat. Cook for 3 to 4 minutes per side, until golden in spots and hot through.
