Method

Blend the corn with the white onion, unsalted butter, whole milk, eggs, white sugar, baking powder, and salt to make a thick, slightly coarse batter.

Fold the queso seco cheese into the batter.

Bring the water to a steady simmer in a steamer pot.

Overlap pieces of corn husks where needed to make a secure wrapper. Spoon in the batter and fold the wrappers into closed parcels.

Arrange the parcels in the steamer, cover, and steam for 35 to 40 minutes, until the batter is firm and pulls away from the husks.
