Method

Boil the plantain in the water for 15 to 20 minutes, until very tender, then drain well.

Mash with the unsalted butter until smooth. Mix in the eggs, salt, and queso fresco cheese.

Heat the vegetable oil in a skillet over medium heat. Cook the onion for 5 minutes, then stir in the garlic.

Add the ground beef and cook until browned and it reaches 71°C (160°F), breaking it up with a spoon.

Stir in the tomato paste, tomato sauce, dried oregano, and black pepper. Simmer for 8 to 10 minutes, until thick.

Preheat the oven to 190°C (375°F).

Spread half the plantain mixture in a 23 cm (9-inch) baking dish. Add the beef filling and the queso fresco cheese.

Top with the remaining plantain mixture and the queso fresco cheese.
