- 1.5lWater

Method

Bring the water to a boil with the salt. Add the plantain and cook until very tender.

Drain the plantain, reserving a little cooking liquid. Mash it with the unsalted butter until smooth and creamy, adding a splash of the reserved liquid if needed.

Heat the vegetable oil in a skillet over medium heat. Add the red onion and cook until softened but not browned.

Stir the distilled white vinegar into the red onion and cook briefly, just until the onion turns glossy and lightly tangy.

Heat the vegetable oil in a frying pan over medium heat. Fry the salami until browned at the edges, then fry the queso de freír cheese until golden on both sides.
