Method

Bring the water to a boil. Add the basmati rice, cover, and simmer until tender. Keep warm.

Heat the vegetable oil in a wide pot over medium heat. Add the onion and cook until soft, then stir in the garlic.

Add the tomato paste, tomato, green chili, turmeric powder, cumin powder, coriander powder, paprika, salt, and black pepper. Cook until the tomatoes break down into a thick sauce.

Add the red snapper to the sauce, spoon some of the sauce over the fish, and cover the pot.

Simmer gently at about 90°C (194°F) until the red snapper flakes easily and the sauce is fully cooked.

Serve the fish stew over the rice with the lemon on the side for squeezing at the table.
