    Whisk the teff flour with the water until smooth, then stir in the sourdough starter and salt.

    Cover the batter and leave it in a warm place at about 30°C (86°F) until it smells slightly tangy and shows plenty of bubbles.

    Heat a nonstick pan to about 200°C (400°F) and lightly grease it with the vegetable oil.

    Pour in enough batter to coat the pan, then cover and cook until the top is dry and full of small holes while the bottom stays lightly golden.

    Lift out the pancake without flipping and repeat with the remaining batter.
