Method

Grease a shallow dish with the ghee.

Combine the white sugar and water in a heavy pot and bring to a boil.

Whisk the corn starch with a ladleful of the hot syrup until smooth, then whisk it back into the pot.

Cook over medium-low heat for 20 to 25 minutes, stirring constantly, until thick, glossy, and translucent.

Stir in the ghee, cardamom powder, and rose water. Continue stirring until the mixture pulls away from the sides of the pot.
