    Preheat the oven to 220°C (425°F). Rub the pork belly, especially between the scores, with the salt and the black pepper.

    Roast for 25 minutes, then reduce the oven to 180°C (350°F) and continue roasting for 45 to 50 minutes, until the crackling is crisp and the meat is tender.

    Bring the water to a boil, add the potato, and simmer for 18 to 22 minutes, until tender. Drain and keep warm.

    Melt the unsalted butter in a saucepan over medium heat. Stir in the all-purpose flour and cook for 1 minute to make a pale roux.

    Whisk in the whole milk gradually. Simmer for 5 to 7 minutes, stirring, until smooth and thick enough to coat a spoon.

    Stir in the fresh parsley and the salt and cook for 1 minute.
