Method

Rub the beef round with the mustard, garlic, salt, and black pepper. Let it stand while you prepare the sauce base.

Melt the unsalted butter in a heavy pot over medium heat. Add the onion, carrot, celeriac, and parsley root and cook until lightly golden and fragrant.

Nestle the seasoned beef round into the vegetables and brown it well on all sides.

Add the beef stock, bay leaves, and allspice. Cover and braise in the oven at 160°C (320°F) until the beef is very tender.

Lift out the beef round and keep it warm. Remove the bay leaves, then blend the braising vegetables and liquid until completely smooth.

Return the sauce to low heat and stir in the heavy cream. Season with the lemon juice, white sugar, salt, and black pepper. Simmer gently for 5 minutes, until silky.

Stir the active dry yeast into the lukewarm whole milk and let it foam briefly.

Mix the all-purpose flour with the salt, then add the egg and milk mixture. Knead into a soft dough, then work in the white bread.
