- 15gGarlic (crushed)
- 35gPork Lard
- 22gPaprika

- 30gTomato Paste
- 850mlBeef Stock
- 18gAll-Purpose Flour
- 12gSalt

- 8pcsRye Bread (sliced)

Method

Melt the pork lard in a heavy pot over medium heat and cook the onion slowly until deep golden brown.

Add the garlic and stir briefly, then take the pot off the heat and mix in the paprika and tomato paste so the paprika does not scorch.

Return the pot to the heat, add the beef shoulder, and cook until the meat loses its raw color.

Stir in the beef stock, caraway seeds, dried marjoram, salt, and black pepper. Cover and simmer gently until the beef is very tender.

Whisk the all-purpose flour with a little hot cooking liquid until smooth, then stir it back into the pot and simmer until the sauce thickens slightly.

Taste and adjust with more salt or black pepper if needed.
