Method

Stir the active dry yeast into the lukewarm whole milk and let it stand for 5 to 10 minutes, until foamy.

Mix the all-purpose flour and salt. Add the egg and extra virgin olive oil and the yeast mixture, then knead for 8 to 10 minutes, until smooth.

Cover and let the dough rise for about 1 hour, until doubled.

Combine the halloumi cheese, feta cheese, and fresh mint.

Preheat the oven to 190°C (375°F).

Divide the dough into equal portions. Flatten each piece, add the filling, and fold the dough around it, leaving the characteristic raised center.
