Method

Put the beef tripe and blanching water in a large pot. Bring to a boil and cook for 10 minutes, then drain and rinse the tripe and pot.

Heat the vegetable oil in the clean pot. Cook the onion, green bell pepper, celery, and garlic until softened.

Add the tomato and tomato paste and cook until thickened slightly.

Add the beef tripe, water, meat stock, bay leaves, paprika, cumin powder, black pepper, and salt.

Bring to a boil, reduce to a gentle simmer, cover, and cook until the beef tripe is very tender.

Discard the bay leaves and serve hot.
