Cassava

  • 0.9kg
    Cassava Root (peeled, woody core removed, and cut into chunks)
  • 2l
    Water
  • 10g
    Salt

Mojo

  • 120ml
    Sour Orange Juice
  • 18g
    Garlic (crushed)
  • 60ml
    Extra Virgin Olive Oil
  • 3g
    Dried Oregano

    Boil the cassava root in the water until fully tender throughout. Drain well and discard the cooking water.

    Bring the water to a boil, add the salt, then add the cassava and cook until tender but not falling apart.
