    Bring the chicken stock to a gentle simmer. Add the chicken breast and cook until it reaches 74°C (165°F). Transfer to a clean plate, cool briefly, and shred.

    Heat the vegetable oil in a wide pot. Cook the onion and red bell pepper until softened, then add the garlic and annatto paste.

    Add the tomato, carrot, and green peas and cook until the tomato begins to break down.

    Add the white rice and stir to coat, then pour in the chicken stock. Season with the salt and black pepper.

    Cover and cook over low heat until the rice is nearly tender. Fold in the shredded chicken breast and cook until the rice is tender and hot throughout.

    Stir in the fresh coriander, rest off the heat, then fluff and serve.
