Curry
- 800gOctopus (cut into bite-size pieces)
- 200gOnion (chopped)
- 15gGarlic (minced)
- 10gCurry Powder
- 400mlCoconut Milk
- 30mlCoconut Oil
- 8gSalt
- 600mlWater
Rice
- 300gWhite Rice (rinsed)

Method

Put the octopus and cooking water in a pot. Bring to a boil, then simmer until tender. Drain and cut into bite-size pieces.

Drain the octopus and set it aside.

Return the pot to the heat, add the coconut oil, and cook the onion until softened.

Stir in the garlic and curry powder and cook briefly until fragrant.

Add the octopus back to the pot, pour in the coconut milk, season with the salt, and simmer until the sauce thickens and the octopus is fully tender.
