- 500gCassava Leaf (commercially prepared, finely chopped or pounded)
- 400mlCoconut Milk
- 180gOnion (finely chopped)
- 12gGarlic (crushed)
- 30mlCoconut Oil
- 320gTuna (cut into large pieces)
- 30mlLime Juice
- 8gSalt
- 2gBlack Pepper
Rice
- 320gWhite Rice (rinsed)
- 650mlWater

Method

Bring the water to a boil. Add the white rice, cover, reduce the heat, and cook until tender.

Heat the coconut oil in a heavy pot. Cook the onion until soft, then stir in the garlic.

Add the commercially prepared cassava leaf and cook, stirring, until coated in the aromatics.

Pour in the coconut milk and water. Add the salt and black pepper and bring to a gentle simmer.

Cover and cook until the cassava leaf is fully tender and the stew has thickened.

Add the tuna and cook until it reaches 63°C (145°F). Stir in the lime juice and serve with the white rice.
