Method

Heat the vegetable oil to 170°C (338°F). Fry the plantains pieces until they soften and turn lightly golden.

Remove the plantains and flatten each piece into a thick disc.

Raise the oil temperature to 190°C (374°F), then fry the flattened plantains again until crisp and golden.

Drain well and season immediately with salt.
