    Egg (beaten)
  • 200g
    Shrimp (peeled)
  • 150g
    Ham (diced)
  • 120g
    Carrot (finely diced)
  • 50g
    Scallion (finely chopped)
  • 15ml
    Soy Sauce
  • 10ml
    Sesame Oil
  • 40ml
    Vegetable Oil
  • 5g
    Salt

    Break up the chilled white rice with your hands or a spoon so the grains are loose and separate.

    Heat the vegetable oil in a wok over high heat.

    Add the eggs and scramble quickly until just set.

    Add the shrimp and cook until opaque and it reaches 63°C (145°F).

    Stir in the ham and carrot and cook until the carrot is just tender.

    Add the chilled white rice and toss vigorously until steaming hot throughout.

    Season with the soy sauce, salt, and white pepper and keep tossing until everything is evenly coated.
