Method
Follow each step in order. Ingredient names are highlighted as you go.

Heat a large pot over medium heat and add the chili oil.

Add the doubanjiang, garlic, fresh ginger, Sichuan pepper, star anise, and Chinese five-spice, and cook until the mixture is fragrant and the oil turns red.

Pour in the beef stock and water, then add the light soy sauce and scallion. Bring the broth to a steady simmer.

Arrange the beef chuck, firm tofu, enoki mushroom, napa cabbage, and bok choy cabbage on serving plates.

Keep the broth gently bubbling at the table.

Use separate utensils for raw and cooked foods. Cook the beef chuck in small batches in the bubbling broth to at least 63°C (145°F), then allow it to rest for 3 minutes before eating.

Cook the firm tofu, enoki mushroom, napa cabbage, and bok choy cabbage in the bubbling broth until fully heated and tender. Do not return cooked food to a plate that held raw beef chuck.
