Jian DuiSesame Balls with Red Bean Filling

Method

7 steps
  1. 01

Simmer the adzuki beans in the water until very soft, then drain and mash.

  2. 02

Cook the mashed adzuki beans with the white sugar until thick enough to hold their shape. Cool and divide into equal pieces.

  3. 03

Mix the glutinous rice flour and white sugar, add the warm water, and knead into a smooth, pliable dough.

  4. 04

Divide the dough into equal pieces. Flatten each piece, enclose one piece of filling, and seal into a ball.

  5. 05

Moisten each ball lightly and roll it in the sesame seeds.

  6. 06

Heat the vegetable oil in a deep, heavy pan to 150°C (300°F). Fry in uncrowded batches, turning often, until puffed and evenly golden.

  7. 07

    Drain well and serve warm.
