Method

    Soak the dried shiitake mushroom and dried wood ear mushroom in the hot water until softened. Squeeze them dry and slice thinly.

    Bring the water to a simmer. Add the soaked mushrooms, fresh ginger, and fresh bamboo shoots and cook until tender.

    Add the firm tofu, soy sauce, salt, and white pepper and simmer gently until the tofu is hot.

    Whisk the corn starch with the cold water. Stir the slurry into the soup and cook until lightly thickened.

    Slowly drizzle in the eggs while stirring in one direction to form ribbons. Cook until the egg ribbons are fully set.

    Turn off the heat and stir in the black vinegar and sesame oil. Garnish with the scallion and serve hot.
