Method

Stir the white sugar and water together until the sugar dissolves completely.

Place the pisco, lemon juice, egg whites, and the syrup in a shaker and shake without the ice until foamy.

Add the ice and shake again until very cold.

Strain into glasses and finish with a few drops of Angostura bitters on the foam.
