- 140gPeanut Paste
- 55mlPalm Oil
- 160gOnion (finely chopped)
- 10gGarlic (crushed)
- 7gCayenne Chili (finely chopped)

Method

Heat the palm oil in a pot over medium heat until hot, about 160°C (320°F). Add the onion and cook until softened, then stir in the garlic.

Add the taro root and plantain and turn them in the oil for a few minutes.

Pour in the water and bring to a boil at 100°C (212°F), then lower the heat to a gentle simmer at about 95°C (203°F).

Mix the peanut paste with a little hot liquid from the pot until smooth, then stir it into the stew.

Cook until the taro root is tender and the stew has thickened noticeably.
