Method

Heat the palm oil in a pot over medium heat to about 160°C (320°F). Add the onion and cook until soft, then stir in the garlic.

Add the tomato and cook until it breaks down and thickens slightly.

Add the amaranth leaf and stir until it starts to collapse.

Pour in the water and bring to a gentle simmer, about 95°C (203°F).

Add the smoked fish and cook until the greens are fully tender and the liquid has reduced to a light stew.

Stir in the cayenne chili and salt, then simmer briefly before serving.
