    Cowpeas Peas (soaked and peeled)
  • 70ml
    Red Palm Oil
  • 140g
    Onion (finely chopped)
  • 35g
    Crayfish (crushed)
  • 8g
    Salt
  • 180ml
    Water

    Blend the cowpeas with the water until smooth and thick.

    Stir in the red palm oil, onion, crayfish, and salt until evenly mixed.

    Pass the banana leaves briefly over gentle heat so they become flexible, then fold them into secure parcels around the batter.

    Bring the water to a boil at 100°C (212°F) in a large pot fitted for steaming.

    Arrange the parcels above the water, cover well, and steam until the cakes are firm in the center, 60 to 75 minutes.
