    Mix the fermented cassava dough with the salt until evenly seasoned.

    Soften the banana leaves briefly over gentle heat so they fold without tearing.

    Shape the cassava dough into logs and place each one on a piece of banana leaf. Wrap tightly and fold the ends closed.

    Bring the water to a boil at 100°C (212°F) in a large pot fitted for steaming.

    Arrange the wrapped loaves above the boiling water, cover well, and steam for about 90 minutes, until firm and hot through.
