Method

Pound the lemongrass, galangal, fresh turmeric, and garlic into a rough aromatic paste.

Bring the water to a boil at 100°C (212°F), then add the paste and the onion. Simmer for a few minutes until fragrant.

Stir in the tamarind paste, pineapple, and tomato, then simmer gently at about 95°C (203°F) until the vegetables soften slightly and the broth tastes bright.

Add the catfish and poach gently at about 90°C (194°F) until the thickest pieces reach 63°C (145°F) and flake easily.

Season the soup with salt and palm sugar, then finish with fresh coriander just before serving.
