Method

Simmer the catfish with the water and makrut lime leaves at about 95°C (203°F) until the thickest part reaches 63°C (145°F) and flakes easily, about 15 minutes.

Lift out the fish, strain the broth, and flake the flesh, discarding any bones and skin.

Pound the lemongrass, galangal, fresh turmeric, garlic, shallot, and coriander root into a smooth paste.

Heat the vegetable oil over medium heat and cook the paste until fragrant. Add the coconut milk and enough broth to make a light sauce, then simmer gently.

Stir the flaked fish into the gravy and season with fermented fish sauce and palm sugar. Simmer until the flavors come together.

Soften the rice noodles in hot water until tender, then drain.

Divide the noodles among bowls and spoon over the fish gravy. Top with cucumber, bean sprouts, fresh mint, and Vietnamese coriander.
