Mix the coconut milk, palm sugar, garlic, black pepper, and fermented fish sauce until smooth.

Coat the pork loin with the marinade and let it rest for about 30 minutes in the refrigerator.

Cook the jasmine rice with the water at a gentle simmer near 100°C (212°F) until tender and fluffy.

Heat a grill or grill pan to about 230°C (446°F). Grill the pork loin until caramelized and it reaches 63°C (145°F), then rest it for 3 minutes.
