Combine the onion, garlic, fresh ginger, mustard, lemon juice, vegetable oil, Maggi seasoning, paprika, chili powder, salt, and black pepper.

Pat the chicken dry and cut a few shallow slashes into the thickest parts.

Rub the marinade all over the chicken, including inside the cavity, then refrigerate until well seasoned.

Preheat a grill or oven to 200°C (392°F).

Cook the chicken, turning as needed, until the skin is deeply browned and the thickest part of the breast and thigh reaches 74°C (165°F), avoiding the bone when checking.
