- 800gBeef Tripe (well rinsed)
- 2lWater
- 2pcsBay Leaf
- 300mlWhole Milk (warmed)
- 30gUnsalted Butter
- 8gSalt
Dressing
- 15gGarlic (crushed)
- 40mlDistilled White Vinegar
- 6gPaprika

Method

Place the beef tripe in a pot with the water and bay leaves. Bring to a gentle simmer and cook until the tripe is very tender.

Lift out the tripe, cut it into thin strips, and return it to the broth.

Add the whole milk, unsalted butter, and salt to the pot and heat gently without letting the soup boil hard.

Mix the garlic, distilled white vinegar, and paprika in a small bowl.
