Method

Preheat the oven to 190°C (374°F).

Combine the sirene cheese, eggs, and plain yogurt in a bowl, then stir in the baking soda and let the mixture stand briefly.

Brush the baking dish with unsalted butter. Lay in a sheet of phyllo dough, letting it wrinkle naturally, and brush it lightly with more unsalted butter.

Distribute the filling evenly as you continue layering the phyllo dough and unsalted butter, finishing with pastry on top.

Brush the top well with unsalted butter.

Bake until the pie is deeply golden and the center is set and 71°C (160°F), about 45 minutes at 190°C (374°F).
