Method

Mix the glutinous rice with the coconut milk and salt.

Bring the water to a boil in a steamer. Steam the rice until tender, then press it firmly into an even layer in a lined tray.

Warm the coconut milk with the pandan leaves until fragrant, then strain out the leaves.

Whisk the eggs, white sugar, corn starch, and water until smooth. Gradually whisk in the pandan-infused coconut milk.

Cook over low heat, stirring constantly, until slightly thickened and 71°C (160°F).

Pour the custard over the rice and steam until the top is set.

Cool completely before slicing.
