Method

Combine the white rice, water, and salt in a saucepan. Bring to a boil, cover, reduce the heat, and cook until tender. Rest, covered, before fluffing.

Rub the chicken thigh with the turmeric powder and salt and refrigerate for 20 minutes.

Heat the vegetable oil to 180°C (356°F). Fry the chicken in batches until deeply golden and 74°C (165°F) at the center, then drain on a rack.

Heat the vegetable oil over medium heat. Add the onion and cook until soft and lightly golden.

Stir in the garlic, then add the chili paste, palm sugar, lime juice, and salt. Cook until thick, glossy, and slightly jammy.

Serve the rice with the fried chicken and sambal.
