Method

Preheat the oven to 180°C (356°F). Briefly pass the banana leaves over heat or hot water so they soften and bend without tearing.

Line a deep baking dish or lidded pot with the banana leaves.

Add the chicken thigh, onion, garlic, fresh ginger, lemongrass, turmeric powder, salt, and black pepper. Toss everything together well.

Pour in the coconut milk, fold the banana leaves over the chicken, and cover tightly.

Bake until the chicken is very tender, the sauce is fragrant, and the thickest pieces reach 74°C (165°F).
