- 150mlWhole Milk

- 40gUnsalted Butter
- 180gMinas Cheese (finely grated)

Method

Heat the oven to 200°C (392°F) and line a baking tray.

Warm the whole milk with the unsalted butter in a saucepan until the butter melts and the mixture is hot but not boiling.

Place the tapioca starch in a bowl and pour in the hot milk mixture. Stir until the starch is evenly moistened, then let it cool until just warm.

Add the eggs and mix until smooth and sticky.

Stir in the minas cheese, Parmesan, and salt until fully combined.

With damp hands, shape the dough into small balls and place them on the tray with space between them.
