Place the carioca bean and water in a pot. Simmer until the beans are tender but still hold their shape, then drain and reserve the cooking liquid.

Heat the vegetable oil in a large pan over medium heat. Add the bacon and cook until it starts to brown.

Add the pork sausage and cook until well browned and 71°C (160°F) at the center.

Stir in the onion and cook until softened, then add the garlic and cook briefly until fragrant.

Add the cooked carioca bean and toss gently to coat in the fat and aromatics.

Add the collard greens and cook just until wilted.

Push the bean mixture to the side of the pan, pour in the eggs, and stir until fully set and 71°C (160°F), then fold them through the beans.

Sprinkle in the cassava flour gradually, stirring until the mixture becomes lightly crumbly rather than wet.

Season with the salt and black pepper, adding reserved bean liquid as needed if the mixture seems too dry.
