Method

Whisk the sorghum flour with the water in a clean nonreactive bowl until smooth and pourable.

Cover loosely and ferment for about 12 hours at a cool room temperature, no warmer than 24°C (75°F), until pleasantly sour. Discard it if it develops mold, discoloration, or an unpleasant odor.

Bring the water to a boil in a clean pot.

Pour in the fermented sorghum mixture while stirring constantly to prevent lumps.

Lower the heat and cook, stirring often, until the porridge is smooth, thick, and bubbling throughout.

Add the salt and cook for 2 minutes more.

Ladle the ting into bowls and serve warm with the chilled sour milk.
