- 250gWhite Sugar
- 700mlWater
- 20mlLemon Juice
- 1pcsCinnamon Stick
- 5mlVanilla Extract

- 140gWalnuts (finely chopped)
- 160mlHeavy Cream

Method

Bring the water and white sugar to a gentle simmer. Add the lemon juice, cinnamon stick, and vanilla extract.

Lower the apples into the syrup and poach gently until they are tender but still holding their shape. Lift them out carefully.

Boil the syrup for a few more minutes until it becomes slightly more concentrated.

Spoon the walnuts into the center of each poached apples.

Serve the apples with some of the syrup over them and add the heavy cream alongside.
