Method

Combine the ground beef, ground lamb, garlic, salt, black pepper, and water in a bowl. Knead until the mixture becomes sticky and well bound.

Cover and chill the meat mixture so it firms up and is easier to shape.

Shape the mixture into short, even sausages with damp hands.

Cook the sausages on a hot grill or grill pan, turning often, until browned on all sides and 71°C (160°F) at the center.

Warm the somun bread until soft and lightly toasted.

Serve the sausages tucked into the somun bread with the onion, ajvar, and kaymak alongside.
