    Vegetable Oil

    Onion (finely chopped)

    Garlic (crushed)

    Ají Amarillo Paste

    Pork Stock

    Hominy

    Freeze-Dried Potato (rinsed)

    Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until soft.

    Add the garlic, ají amarillo paste, paprika, and cumin powder. Stir until fragrant and evenly mixed.

    Add the pork shoulder and cook until the outside is no longer raw.

    Pour in the pork stock and bring to a gentle simmer at 95°C (203°F). Cook until the pork begins to soften.

    Add the hominy and the freeze-dried potato. Continue simmering at 95°C (203°F) until the pork is fully tender and the chuño has softened into the broth.

    Season with salt and black pepper.

    Serve the soup very hot, finished with fresh parsley.
