Method

Combine the white rice and water and cook at 95°C (203°F) until tender. Meanwhile, simmer the potato in the water until soft, then drain. Keep the rice and potato warm.

Heat the vegetable oil in a wide pot over medium heat. Add the onion and cook until soft and lightly golden.

Stir in the garlic, ají amarillo paste, paprika, and cumin powder. Cook until fragrant and well blended.

Pour in the chicken stock, then add the salt and black pepper. Bring the sauce to a gentle simmer at 95°C (203°F).

Add the chicken thigh to the sauce and cook gently at 95°C (203°F) until the meat is tender, reaches 74°C (165°F), and the sauce has thickened slightly.

Serve the chicken and sauce with the boiled potato and white rice, then scatter over the fresh parsley.
