    Place the eggs in a saucepan with the water. Bring to a gentle simmer at 95°C (203°F) and cook until hard-boiled, then cool, peel, and slice.

    Heat the vegetable oil to 180°C (356°F). Fry the potato until crisp and golden, then drain and keep warm.

    Season the beef sirloin with salt, black pepper, cumin powder, and paprika.

    Heat a large pan over high heat. Add the chorizo and cook until it releases some fat, browns around the edges, and reaches 71°C (160°F).

    Add the seasoned beef sirloin and sear quickly until browned and 63°C (145°F). Keep it in the pan for at least 3 minutes while the vegetables and sauce cook.

    Add the red onion, tomato, and hot chili. Cook until the onion softens slightly and the tomato starts to break down.

    Pour in the Worcestershire sauce and blonde beer. Let the liquid simmer at 95°C (203°F) until slightly reduced and glossy.

    Pile the fries onto a serving platter, spoon the beef and sausage mixture over the top, and finish with the sliced eggs.
