Place the beef shank, beef stock, and onion in a large pot. Bring to a gentle simmer at 95°C (203°F).

Cook until the beef begins to soften, skimming the surface if needed.

Add the garlic, cumin powder, salt, and black pepper. Continue simmering at 95°C (203°F).

Add the freeze-dried potato and cook until it begins to soften.

Add the potato and carrot. Simmer until both are tender and the broth tastes rich and developed.

Stir in the green peas and cook just until they are tender.
