Stew
- 650gChicken Thigh (cut into bite-sized pieces)
- 300gTomato (chopped)
- 80gGreen Chili (split lengthwise)
- 900mlWater
- 7gSalt
- 20gFresh Coriander (roughly chopped)
Base
- 150gOnion (thinly sliced)
- 12gGarlic (sliced)
- 15gFresh Ginger (julienned)
- 20mlVegetable Oil

Method

Heat the vegetable oil in a pot over medium heat. Add the onion and cook until softened.

Add the garlic and fresh ginger, and stir until fragrant.

Add the chicken thigh and cook until the outside is no longer raw.

Add the tomato, green chili, water, and salt, then bring to a gentle simmer at about 95°C (203°F).

Cook until the chicken thigh is tender, reaches 74°C (165°F), and the broth tastes full and lightly spicy.

Stir in the fresh coriander just before serving.
