Stew

    Chicken Thigh (cut into bite-sized pieces)
  • 300g
    Tomato (chopped)
  • 80g
    Green Chili (split lengthwise)
  • 900ml
    Water
  • 7g
    Salt
  • 20g
    Fresh Coriander (roughly chopped)

    Onion (thinly sliced)
  • 12g
    Garlic (sliced)
  • 15g
    Fresh Ginger (julienned)
  • 20ml
    Vegetable Oil

    Heat the vegetable oil in a pot over medium heat. Add the onion and cook until softened.

    Add the garlic and fresh ginger, and stir until fragrant.

    Add the chicken thigh and cook until the outside is no longer raw.

    Add the tomato, green chili, water, and salt, then bring to a gentle simmer at about 95°C (203°F).

    Cook until the chicken thigh is tender, reaches 74°C (165°F), and the broth tastes full and lightly spicy.

    Stir in the fresh coriander just before serving.

    Serve hot.
