Rice
- 400gWhite Rice (rinsed)
- 900mlChicken Stock
- 2pcsBay Leaf (whole)
Sauce
- 70gTomato Paste
- 200gTomato (finely chopped)
- 150gOnion (finely chopped)
- 10gGarlic (crushed)
- 60mlRed Palm Oil
- 10gRed Chili (finely chopped)

Method

Heat the red palm oil in a heavy pot over medium heat.

Add the onion and cook until soft and lightly golden, then stir in the garlic and cook just until fragrant.

Stir in the tomato paste and cook until it darkens slightly, then add the tomato and red chili. Simmer until the mixture becomes thick and glossy.

Add the white rice to the sauce and stir well so every grain is coated.

Pour in the chicken stock, add the bay leaves and salt, and bring everything to a full boil.

Lower the heat, cover, and cook gently until the white rice is tender and the liquid has been absorbed.

Remove the pot from the heat, leave it covered briefly to finish steaming, then fluff the rice and serve.
