- 350mlVegetable Oil
Beans
- 350gBlack Bean (cooked)
- 80gOnion (finely chopped)
- 10gGarlic (crushed)
- 7gSalt

Topping
- 180gTomato (finely chopped)
- 40gOnion (finely chopped)
- 8gCulantro (finely chopped)
- 120gQueso Fresco Cheese (crumbled)

Method
Follow each step in order. Ingredient names are highlighted as you go.

Mash the cooked black beans until thick but still spreadable.

Cook the onion in a small pan until softened, add the garlic, then stir in the mashed black beans, salt, and black pepper. Keep the mixture warm.

Combine the onion, tomato, and culantro in a small bowl.

Heat the vegetable oil to 175°C (347°F) and fry the corn tortillas until crisp. Drain well.

Spread the bean mixture over each tortilla, spoon on the fresh topping, and finish with the crumbled queso fresco cheese.
