Boil Up

  • 700g
    Pork Shoulder (cut into chunks)
  • 2l
    Water
  • 12g
    Salt
  • 3g
    Black Pepper
  • 12g
    Garlic (crushed)
  • 600g
    Cassava Root (peeled and cut into pieces)
  • 500g
    Yam (peeled and cut into pieces)
  • 450g
    Sweet Potato (peeled and cut into pieces)
  • 2pcs
    Plantain (peeled and cut into pieces)
  • 4pcs
    Egg (hard-boiled)

Relish

  • 220g
    Tomato (finely chopped)
  • 160g
    Onion (finely chopped)
  • 30ml
    Lime Juice
  • 8g
    Culantro (finely chopped)

    Place the pork shoulder in a large pot with the water, salt, black pepper, and garlic. Bring to a simmer and cook until the pork starts to become tender.

    Add the cassava root, yam, sweet potato, and plantains to the pot and continue simmering until the pork is tender, the cassava is fully cooked, and all the vegetables are soft.

    Mix the tomato, onion, lime juice, and culantro in a bowl and let it stand briefly so the flavors combine.

    Arrange the boiled pork, vegetables, and eggs on a serving platter and spoon over some of the relish just before serving.
